The menu is a masterclass in Shanghai's foundational flavors: the 'red-braising' technique that turns pork belly into caramelized, melt-in-your-mouth cubes; the delicate smokiness of tea-smoked fish; the absurd richness of crab roe stirred into silken tofu. The hongshao rou (red braised pork) is the dish that made Old Jesse famous — each cube glistens like polished mahogany, the fat rendered to butter-softness, the lean meat pulling apart in silky strands.
